I got to a little bit of thinking today, and I realized that I can't believe it is already January! And then I thought... well I can look at this in two ways: 1.) Oh my gosh! a whole new year! A whole new decade! Whoaaaaaa! or 2.) Just another day, it doesn't really make a difference anyway. On the contrary, mindset definitely has a little bit to do with either one of those perspectives. On the one hand, I am extremely excited about what 2011 has to offer for me, and what new things I may come across, and I am most of all excited about trying my hand at raw. On the other hand, I would have done everything that I will do regardless of whether the year changed or not.. Or would I have? The turning of a year makes us all believe that it is a huge and exciting deal, and don't get me wrong, of course holidays are fun, but in reality time always continues on, and every passing day is inevitable anyway. There is the optimistic view, and the pessimistic view. I think you can see which one is which. Which perspective will you choose for this new year


Anyways, enough with my philosophical thoughts, let's get onto the bulk of my day. This morning, I had a most wonderful smoothie this morning. It was Sarma's Bee Protein Smoothie. I had made it before, but this time it just came out better for some reason.

I write on the page what I think of recipes after I make them, so that's the hand writing. I made the full recipe (2 servings) and had some before the gym, and some after. I made my way over to Borders today and bought A Vegan Girl's Guide to Life and Slim Calm Sexy Yoga. I'm excited for them. Books are something else that soothes me as well. I went to Starbucks and had my little array of teas and I brought my Kombucha with me.



When I got home, I didn't feel like making anything extravagant, and I had made Gena's Asian Dressing on hand, so I spiralized a zucchini and a carrot, added a chopped tomato and some kelp noodles and put Gena's dressing on top and called it a night. Oh, well of course I had a few olives and a few of my macaroons as well.



Clearly not the prettiest dinner ever, but it sufficed. I'll finish my night with some tea and a good book... my vacation comes to a close tomorrow. Tear Tear.. but then again, we always have to go back to reality. That's just life.


Raw Vegan Macaroons (a variation from Sarma's recipe)

3 c shredded dried coconut
1 1/2 c [fair trade] cocoa powder
1 t [fair trade] vanilla extract
1/2 t sea salt
1 c maple syrup [preferably grade b], or agave

mix all of these, form into balls using a tablespoon (about 24) and dehydrate on 112 degrees for about 8 hours or until desired consistency is reached
for vanilla, sub in finely ground almonds (almond flour/meal) for the cocoa powder

Today was not a day for any new recipes, but maybe that's what tomorrow will bring. Good night and ta ta for now!
